Description
A delicious and healthy salad with grilled Cajun salmon and fresh vegetables.
Ingredients

- 4 fillets salmon (skinless)
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil (for grilling)
- 4 cups kale (chopped and stems removed)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (sliced)
- 1/2 cup red onion (thinly sliced)
- 3 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/4 cup olive oil (for dressing)
Instructions
- Preheat the grill to medium-high heat.
- Rub the salmon fillets with olive oil and Cajun seasoning.
- Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky.
- In a large mixing bowl, combine the chopped kale, cherry tomatoes, cucumber, and red onion.
- In a separate bowl, whisk together the lemon juice, honey, Dijon mustard, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Place the salad on a serving platter and top with the grilled Cajun salmon.
- Serve immediately and enjoy!
Notes
- For a spicier kick, add additional Cajun seasoning to taste.
