Instructions

  1. Prepare the Crust: Combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until combined. Press the mixture into the bottom of individual jars or serving dishes.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing well. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture gently.
  3. Prepare the Caramel Sauce: In a saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color. Add the butter and stir until melted. Slowly pour in the heavy cream while stirring. Allow it to boil for 1 minute, then remove from heat and let it cool.
  4. Assemble the Jars: Layer the cheesecake mixture on top of the crust in the jars. Sprinkle chopped pecans over the cheesecake layer. Drizzle homemade caramel sauce over the pecans. Add another layer of cheesecake mixture. Top with whipped cream, another drizzle of caramel, and additional pecans for garnish.
