Description

Delicious chicken alfredo lasagna roll-ups made with creamy garlic alfredo sauce, mozzarella, ricotta, and Parmesan cheeses.


Ingredients

  • 8 lasagna noodles
  • 15 ounces jar garlic alfredo sauce (divided use)
  • 3 cups shredded mozzarella cheese (divided use)
  • 1 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 cups shredded cooked chicken (use a rotisserie chicken)
  • 1 Tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 375° F.
  2. Cook lasagna noodles according to the package directions, about 2 minutes less than advised.
  3. Drizzle a little olive oil over the noodles after draining to prevent sticking.
  4. Add ¼ cup of garlic alfredo sauce to the bottom of a 9×13-inch baking dish and set aside.
  5. In a bowl, combine ¾ cup garlic alfredo sauce, 2 cups mozzarella cheese, Parmesan cheese, ricotta cheese, Italian seasoning, garlic powder, kosher salt, and black pepper. Mix until well combined.
  6. Add 2 cups shredded chicken to the bowl and mix until everything is incorporated.
  7. Lay out a cooked lasagna noodle on a clean surface.
  8. Transfer ½ cup of the chicken mixture onto the noodle.
  9. Roll up the lasagna noodle and place it in the baking dish seam-side down. Continue with remaining noodles.
  10. Pour the remaining garlic alfredo sauce evenly over the roll-ups, then sprinkle with the remaining mozzarella cheese.
  11. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is hot and bubbly.
  12. Optional: Broil for a minute or two for a golden brown top, keeping a close watch to avoid burning.
  13. Sprinkle with chopped fresh parsley before serving.
