- 8 lasagna noodles
- 15 ounces jar garlic alfredo sauce (divided use)
- 3 cups shredded mozzarella cheese (divided use)
- 1 cup grated Parmesan cheese
- 1 cup ricotta cheese
- ½ teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 cups shredded cooked chicken (use a rotisserie chicken)
- 1 Tablespoon chopped fresh parsley (optional)
Instructions
- Preheat the oven to 375° F.
- Cook lasagna noodles according to the package directions, about 2 minutes less than advised.
- Drizzle a little olive oil over the noodles after draining to prevent sticking.
- Add ¼ cup of garlic alfredo sauce to the bottom of a 9×13-inch baking dish and set aside.
- In a bowl, combine ¾ cup garlic alfredo sauce, 2 cups mozzarella cheese, Parmesan cheese, ricotta cheese, Italian seasoning, garlic powder, kosher salt, and black pepper. Mix until well combined.
- Add 2 cups shredded chicken to the bowl and mix until everything is incorporated.
- Lay out a cooked lasagna noodle on a clean surface.
- Transfer ½ cup of the chicken mixture onto the noodle.
- Roll up the lasagna noodle and place it in the baking dish seam-side down. Continue with remaining noodles.
- Pour the remaining garlic alfredo sauce evenly over the roll-ups, then sprinkle with the remaining mozzarella cheese.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is hot and bubbly.
- Optional: Broil for a minute or two for a golden brown top, keeping a close watch to avoid burning.
- Sprinkle with chopped fresh parsley before serving.
