- 12 oz semi-sweet chocolate chips
- 8 oz cream cheese, softened
- 1 teaspoon peppermint extract
- 2 cups crushed peppermint candies
- 1 cup powdered sugar
- 1 tablespoon unsalted butter
Instructions
- Prepare the Peppermint Mixture: In a mixing bowl, combine softened cream cheese and powdered sugar. Mix until smooth. Add the peppermint extract and crushed peppermint candies to the mixture. Stir until well combined.
- Form the Truffles: Scoop small portions of the peppermint mixture and roll them into balls (about 1 inch in diameter). Place the balls on a baking sheet lined with parchment paper. Chill in the refrigerator for about 30 minutes until firm.
- Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
- Coat the Truffles: Remove the chilled peppermint balls from the refrigerator. Using a fork, dip each ball into the melted chocolate, ensuring it is completely coated. Allow excess chocolate to drip off before placing the truffle back on the parchment paper.
- Decorate: Before the chocolate sets, decorate the truffles with sprinkles or additional crushed peppermint candies. Let the chocolate coating harden completely. This can take 15-20 minutes at room temperature or faster if refrigerated.
Notes
- For a softer peppermint flavor, reduce the amount of peppermint extract to 1/2 teaspoon.
- Ensure the cream cheese is fully softened to avoid lumps in the mixture.
- If you don’t have a microwave, melt the chocolate using a double boiler method for a smoother consistency.
