Instructions

  1. Prepare the Peppermint Mixture: In a mixing bowl, combine softened cream cheese and powdered sugar. Mix until smooth. Add the peppermint extract and crushed peppermint candies to the mixture. Stir until well combined.
  2. Form the Truffles: Scoop small portions of the peppermint mixture and roll them into balls (about 1 inch in diameter). Place the balls on a baking sheet lined with parchment paper. Chill in the refrigerator for about 30 minutes until firm.
  3. Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
  4. Coat the Truffles: Remove the chilled peppermint balls from the refrigerator. Using a fork, dip each ball into the melted chocolate, ensuring it is completely coated. Allow excess chocolate to drip off before placing the truffle back on the parchment paper.
  5. Decorate: Before the chocolate sets, decorate the truffles with sprinkles or additional crushed peppermint candies. Let the chocolate coating harden completely. This can take 15-20 minutes at room temperature or faster if refrigerated.
