Description

A delightful pumpkin apple compote perfect for fall.


Ingredients

  • 1 cup pumpkin puree (canned or homemade)
  • 2 medium tart apples (like Granny Smith), peeled and chopped
  • 1/2 cup toasted pecans, chopped
  • 1 tsp ground cinnamon
  • 1/4 cup pure maple syrup
  • 1/4 tsp freshly grated nutmeg
  • 1 tsp vanilla extract
  • 1/4 cup water

Instructions

  1. Gather all ingredients. Wash and chop the apples into small pieces.
  2. In a medium saucepan over medium heat, add the chopped apples and water; cover and cook for about 5 minutes until softened.
  3. Stir in pumpkin puree, cinnamon, nutmeg, maple syrup, and vanilla extract until well combined.
  4. Fold in the toasted pecans gently.
  5. Reduce heat to low and let simmer for 20 minutes, stirring occasionally to prevent sticking.
