Ingredients

- 1 cup pumpkin puree (canned or homemade)
- 2 medium tart apples (like Granny Smith), peeled and chopped
- 1/2 cup toasted pecans, chopped
- 1 tsp ground cinnamon
- 1/4 cup pure maple syrup
- 1/4 tsp freshly grated nutmeg
- 1 tsp vanilla extract
- 1/4 cup water
Instructions
- Gather all ingredients. Wash and chop the apples into small pieces.
- In a medium saucepan over medium heat, add the chopped apples and water; cover and cook for about 5 minutes until softened.
- Stir in pumpkin puree, cinnamon, nutmeg, maple syrup, and vanilla extract until well combined.
- Fold in the toasted pecans gently.
- Reduce heat to low and let simmer for 20 minutes, stirring occasionally to prevent sticking.
- Allow to cool before transferring to jars or an airtight container.
Notes
- Make sure to peel and chop the apples into uniform pieces for even cooking.
- This compote can be used as a topping for pancakes, yogurt, or served as a side dish.
