Instructions

  1. Prepare the Crust:

    • Gradually add in 1 cup of sugar and vanilla extract, mixing until well incorporated.
    • Add the eggs one at a time, mixing on low speed after each addition.
    • Stir in the sour cream and heavy cream, blending until smooth.
  3. Assemble and Bake:
    • Pour the cream cheese mixture over the cooled crust in the springform pan.
    • Bake in the preheated oven for about 1 hour or until the edges are set and the center jiggles slightly.
    • Turn off the oven and leave the door slightly ajar. Let the cheesecake sit in the oven for about 1 hour.
  4. Chill the Cheesecake:
    • Remove the cheesecake from the oven and let it cool to room temperature.
    • Refrigerate for at least 4 hours or overnight before serving.
