- 2/3 cup sour cream
- 2/3 cup heavy cream
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar (for crust)
- 1/2 cup unsalted butter, melted

Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (163°C).
- In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, melted butter, and a pinch of salt until well combined.
- Press the mixture into the bottom of a 9-inch springform pan. Use the back of a spoon to smooth it out.
- Bake the crust for 10 minutes, then remove from oven and set aside to cool.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gradually add in 1 cup of sugar and vanilla extract, mixing until well incorporated.
- Add the eggs one at a time, mixing on low speed after each addition.
- Stir in the sour cream and heavy cream, blending until smooth.
- Assemble and Bake:
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- Bake in the preheated oven for about 1 hour or until the edges are set and the center jiggles slightly.
- Turn off the oven and leave the door slightly ajar. Let the cheesecake sit in the oven for about 1 hour.
- Chill the Cheesecake:
- Remove the cheesecake from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours or overnight before serving.
