- 1 cup self-raising flour (Essential for that fluffy lift; can substitute with all-purpose flour plus baking powder.)
- 1 tbsp butter (Necessary for a golden, crispy finish when frying your scones.)
Instructions
- Cover 500 g potatoes in cold water and bring to a gentle boil in a medium saucepan. Let them simmer until they are soft, about 15 minutes.
- Drain the potatoes and add 30 g butter. Mash the potatoes until smooth and fluffy, using a fork to whip them for an ultra light texture.
- Stir in 1 cup self-raising flour and combine it gently with a wooden spoon or on low speed if you’re using a mixer—no need to overmix!
- Turn the dough onto a lightly floured work surface. Lightly flour a rolling pin and roll the dough to about 1 cm / ½ inch thick, then slice it into quarters.
- Heat a large heavy frying pan over medium heat, then add 1 tbsp butter for frying. Cook the scones for 3-5 minutes per side, until the outside is crispy and golden brown.
