Key Ingredients for Doritos Locos Taco Casserole

Every bite of Doritos Locos Taco Casserole takes you on a flavor journey, reminiscent of your favorite taco joint but served in a comforting, family-friendly dish. The star ingredients blend harmoniously, offering a delightful crunch paired with rich, savory flavors.

  • Ground Beef: A hearty base for the casserole, I prefer using lean ground beef to keep things rich without being overly greasy. Cooking it with taco seasoning infuses the meat with zesty flavors that make every bite pop.

  • Doritos®: Of course, the iconic Doritos are what make this casserole a true standout. The cheesy, spicy chips not only add a fantastic crunch but also serve as a base layer that soaks up the flavorful juices.

  • Taco Seasoning: Pre-packaged taco seasoning is a timesaver. It delivers a robust blend of spices—cumin, chili powder, and garlic—that elevates the flavor of the ground beef and melds beautifully with the other ingredients.

  • Black Beans: These add protein and a creamy texture. Rinsing them first helps to reduce sodium and maintain a light taste that balances the zest of the tacos.

  • Cheddar Cheese: A generous sprinkle of shredded cheddar on top provides melted goodness that binds the casserole together. Choosing sharp cheddar will enhance the overall flavor profile.

  • Sour Cream: A dollop on top just before serving adds a creamy contrast to the spicy flavors, tying everything together beautifully. If you’re avoiding dairy, a plant-based alternative works just as well.

  • Fresh Toppings: Don’t forget the garnishes! Chopped green onions, diced tomatoes, and fresh cilantro add a refreshing finish and vibrant color to your Doritos Locos Taco Casserole.

With these ingredients in hand, you’re well on your way to crafting a dish that brings everyone around the dinner table with smiles. Enjoy the process; cooking should be fun!

Cooking Tips and Notes for Doritos Locos Taco Casserole

Crafting the perfect Doritos Locos Taco Casserole feels like a culinary adventure that balances flavor and simplicity. Here are a few tips to take your casserole from good to great:

Selecting the Right Ingredients

  • Doritos: For an authentic flavor boost, I recommend using Cool Ranch or Nacho Cheese flavors. The unique taste elevates the entire dish. Feel free to crush them into varying sizes for a mix of crunchy and softer textures throughout the casserole.
  • Ground Beef: Lean beef keeps the dish juicy without being greasy. You can substitute turkey or plant-based meat for a leaner, vegetarian option. Just be cautious about seasoning as different meats have varying flavors.

Layering for Success

  • Stacking: Evenly layer your ingredients to ensure every bite is packed with flavor. Start with meat, then cheese, followed by a layer of crushed Doritos. This prevents soggy chips and maintains their crispiness.
  • Garnishing: Adding fresh toppings like chopped cilantro, diced tomatoes, or a dollop of sour cream can really freshen up the dish. It’s a great way to customize your casserole to your taste.

Baking with Care

  • Temperature: Bake at the recommended temperature, but keep an eye on it to prevent over-browning. If necessary, cover the casserole with foil halfway through to protect the top layer.
  • Resting Time: After you pull your casserole from the oven, let it sit for about 10 minutes. This allows the flavors to meld and makes serving easier.

With these tips, your Doritos Locos Taco Casserole is bound to impress at your next gathering! Enjoy a dish full of vibrant flavors, and don’t be afraid to add your personal touch!

Description

This Doritos Taco Casserole is a deliciously creamy and crunchy meal that your family will love!

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb ground chuck
  • ½ a yellow onion (chopped)
  • 4 garlic cloves (chopped)
  • 1 oz packet of taco seasoning
  • 14 oz can fire roasted tomatoes
  • 10 oz can Rotel diced tomatoes and green chilis
  • 2 (8 oz) cans tomato sauce
  • ½ cup water
  • ¼ tsp salt
  • ½ tsp cracked black pepper
  • 8 oz cream cheese (softened)
  • 8 oz sour cream
  • 4 cups cooked white rice
  • 1 ½ tbsp taco seasoning
  • 3 cups whole nacho cheese Doritos
  • 8 oz freshly shredded colby jack cheese
  • 4 oz freshly shredded cheddar cheese
  • For serving: shredded lettuce, tomatoes, sour cream, hot sauce

Instructions

  1. Heat up a pan with olive oil and add in the ground beef. Break up the beef using a wooden spoon or meat masher and then add in the onions and garlic. Saute that on a medium high heat until the meat is brown.
  2. Once the meat is brown, use a paper towel and mop up most of the excess oil in the pan, leaving about 2 tbsp of oil in the pan. Then, shake in the packet of taco seasoning and saute that in with the ground beef.
  3. Next, pour in the can of fire roasted tomatoes, Rotel, both cans of tomato sauce, and fill one of the empty cans of tomato sauce with a ½ cup of water, swish the water around to get the excess tomato sauce out, and pour that into the pan as well.
  4. Add in salt and cracked black pepper and stir everything together. Now bring the pan to a boil, then lower it to a simmer, and let that simmer for about 10 – 15 minutes.
  5. While that’s simmering, in a large measuring cup or bowl, add in cream cheese, sour cream, cooked white rice, and 1 ½ tbsp taco seasoning. Mix that together until fully combined and set it aside.
  6. Now it’s time to assemble the casserole! Grease a large deep dish baking dish and begin layering: Layer 1: Thin layer of the meat sauce. Layer 2: Half the creamy rice mixture. Layer 3: Take half of the Doritos, roughly crush them up, and sprinkle them over the top. Layer 4: Half of the freshly shredded colby jack cheese.
  7. Layer 5: More of the meat sauce. Layer 6: The rest of the creamy rice mixture. Layer 7: Freshly shredded cheddar cheese. Layer 8: The rest of the meat sauce.
  8. Layer 9: The rest of the Doritos, roughly crush them up, and sprinkle them over the top. Layer 10: The rest of the freshly shredded colby jack cheese.
  9. Bake it in the oven at 350°F for about 25 – 30 minutes. If the casserole starts getting too browned on top, spray a piece of aluminum foil with non-stick cooking spray, and place it spray side down loosely over the casserole to cover it.
  10. Once it’s done, garnish it with some shredded lettuce, tomatoes, sour cream, and hot sauce. Enjoy!
