Description

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • 1 24 oz jar marinara sauce
  • 4 cups chicken or beef broth
  • 1 14 oz can diced tomatoes
  • 8 oz lasagna noodles, broken into pieces
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a large pot, cook ground beef with onion over medium heat until browned. Drain excess fat if needed.
  2. Add garlic, Italian seasoning, and red pepper flakes; cook 1 minute until fragrant.
  3. Stir in marinara sauce, broth, and diced tomatoes. Bring to a boil.
  4. Add broken lasagna noodles and cook until tender, about 10–12 minutes. Stir occasionally to prevent sticking.
  5. Season with salt and black pepper to taste.
  6. Ladle soup into bowls and top with a dollop of ricotta, a sprinkle of mozzarella, and Parmesan.
  7. Garnish with fresh basil or parsley before serving.
