Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. Make the Cake Batter: In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, beat the eggs until thick. Gradually add the sugar and continue beating until fluffy. Mix in the water and peppermint extract. Gradually add the dry ingredients until well combined.
  3. Divide and Color the Batter: Divide the batter into two equal parts. Add red food coloring to one part until the desired shade is reached, leaving the other part plain.
  4. Create the Stripe Effect: Alternate spoonfuls of red and plain batter onto the prepared pan. Use a knife to gently swirl the colors together for a striped effect.
  5. Bake the Cake: Bake for 10-12 minutes or until the cake springs back when touched. While still warm, roll the cake with the parchment paper from the short side. Let it cool completely rolled.
  6. Make the Filling: In a bowl, whip the cream with powdered sugar, cocoa powder, and vanilla extract until stiff peaks form.
  7. Assemble the Cake Roll: Carefully unroll the cooled cake. Spread the whipped cream filling evenly over the cake. Re-roll the cake without the parchment.
  8. Chill and Serve: Wrap the cake roll in plastic wrap and refrigerate for at least an hour before serving. Slice and garnish with crushed peppermint candies if desired.
