Ingredients
Scale
- 6 large eggs
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup butter, melted
- 1/4 cup milk
- 1 cup heavy cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 16–20 fresh strawberries
- Black sesame seeds (for Santa’s eyes)
- Edible decorations (e.g., snowflakes)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
- Prepare the Cake Roll: In a bowl, beat eggs and granulated sugar until thick and pale. Sift flour, baking powder, cocoa powder, and salt together. Gradually fold the dry ingredients into the egg mixture. Add vanilla extract, melted butter, and milk. Mix until smooth. Pour the batter into the prepared pan. Spread evenly. Bake for 12-15 minutes. The cake should spring back when touched.
- Roll the Cake: Once baked, turn the cake onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and roll the cake with the towel. Let it cool completely in this shape.
- Prepare the Filling: Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Carefully unroll the cake and spread a layer of whipped cream over the surface. Place whole strawberries on top (trim the bottoms so they sit flat), then gently reroll the cake.
- Decorate the Cake: Use remaining whipped cream to create snowy peaks around the strawberries on the top. Cut a small section off the tip of each strawberry and add a small dollop of cream for Santa’s hat. Use black sesame seeds for eyes and add edible decorations as desired.
- Chill: Refrigerate the cake for at least 1 hour before serving.
Notes
- Roll the cake while it’s warm to prevent cracking.
- To make precise Santa faces, use a toothpick to carefully place the black sesame seeds.
- You can add flavor to the cream by incorporating a splash of liqueur or a different extract, like almond or mint.
- For an extra festive touch, sift cocoa powder or powdered sugar over the top of the cake before serving.
