Description

A delicious grilled shrimp taco recipe featuring marinated shrimp, fresh pineapple, and tortillas.

Ingredients

Scale
  • 1 lb (450g) large shrimp, peeled and deveined
  • 8 small corn tortillas
  • 1 cup pineapple chunks
  • 1/2 cup red onion, finely diced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Marinate the Shrimp: In a bowl, whisk together olive oil, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Add the shrimp to the mixture, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes.
  2. Prepare the Grill: Preheat your grill to medium-high heat. If using, soak wooden skewers in water for about 15 minutes to prevent burning.
  3. Grill the Shrimp: Thread shrimp onto skewers for easy handling (optional). Grill the shrimp for 2-3 minutes on each side or until opaque and slightly charred. Grill the pineapple chunks for 2 minutes, turning once, until slightly caramelized.
  4. Warm the Tortillas: Place the tortillas on the grill for about 30 seconds on each side or until warm and pliable.
  5. Assemble the Tacos: Layer grilled shrimp, pineapple chunks, and diced red onion onto each tortilla. Garnish with fresh cilantro.
  6. Serve: Serve immediately with lime wedges on the side.

Notes

  • Skewer Assistance: If you prefer, skewing the shrimp can make grilling easier and help prevent pieces from falling through the grill.
  • Spice Variation: Adjust the level of paprika and cumin based on your spice preference. Add a pinch of chili powder if you like it spicier.
  • Tortilla Options: Flour tortillas can be used as an alternative to corn tortillas.
  • Sauce Suggestion: Consider adding a drizzle of chipotle mayo or avocado crema for extra flavor.
