This flavorful baked mahi mahi recipe is infused with lemon and garlic, making it a perfect dish for a healthy dinner.

- 5–6 fillets mahi mahi
- 2 large lemons
- 1 small red onion (sliced)
- 1 tbsp parsley
- 2 tbsp olive oil
- 2 tbsp minced garlic
- 1 tsp thyme
- 3 tbsp butter
- to taste salt
- to taste pepper
- to taste chili flakes (optional)
Instructions
- Lightly oil a pan and set aside.
- Use a paper towel to pat the fish dry.
- In a small bowl, mix together minced garlic, thyme, and parsley, then set aside.
- Slice the lemons and thinly slice the red onion into rings.
- Lay the lemon slices on the baking pan.
- Place the fish on top of the lemon slices, ensuring each fillet has two slices underneath.
- Top each fillet with a pinch of salt, pepper, and chili flakes if desired.
- Spread the parsley mixture on top of the fillets.
- Top each fillet with two thinly sliced pieces of butter.
- Layer with sliced olives and sliced onions if desired.
- Bake at 375°F for 15-20 minutes or until the center of the fillet is flaky and cooked thoroughly.
- The insides should be white and not grey; grey indicates overcooking.
Notes
- If you desire a sweet flavor, add 2 tbsp honey to the garlic mixture.
- Oven temperature may vary; adjust baking time as necessary.
