Description

Ingredients

  • 1 cup pancake mix
  • 1 large egg
  • ¾ cup whole milk (or non-dairy alternative)
  • 2 tbsp unsalted butter (for cooking)
  • ¼ cup pure maple syrup (for serving)
  • ½ cup chocolate chips or fresh blueberries (optional)

Instructions

  1. In a mixing bowl, combine pancake mix, egg, and milk. Whisk until smooth (lumps are okay).
  2. Preheat a non-stick skillet over medium heat and melt a teaspoon of butter.
  3. Using a small ice cream scoop, drop spoonfuls of batter onto the skillet about an inch apart.
  4. Add chocolate chips or berries on top before bubbles form around the edges.
  5. Cook until bubbles appear (2-3 minutes), then flip and cook until golden brown (another 2-3 minutes).
  6. Serve warm drizzled with maple syrup.
