Instructions
- Start by whisking together the flour, sugar, baking powder, and salt in a large bowl. This step always reminds me of early mornings when everything is quiet and the day hasn’t fully begun yet.
- In another bowl, mix the milk, egg, melted butter, and vanilla until smooth.
- Pour the wet ingredients into the dry and gently stir until just combined. The batter should be thick but pourable.

- Using a spoon or small scoop, drop small rounds of batter onto the pan. Watching them puff up is half the fun.
- Once bubbles form on the surface, flip them gently and cook until golden on both sides.
- Repeat until all the batter is used, keeping the cooked Pancake Poppers warm as you go.
