Description

Delicious and fluffy pancakes that are perfect for breakfast or brunch.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Start by whisking together the flour, sugar, baking powder, and salt in a large bowl. This step always reminds me of early mornings when everything is quiet and the day hasn’t fully begun yet.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla until smooth.
  3. Pour the wet ingredients into the dry and gently stir until just combined. The batter should be thick but pourable.
  4. Heat a non-stick pan or skillet over medium heat and lightly grease it.
  5. Using a spoon or small scoop, drop small rounds of batter onto the pan. Watching them puff up is half the fun.
  6. Once bubbles form on the surface, flip them gently and cook until golden on both sides.
  7. Repeat until all the batter is used, keeping the cooked Pancake Poppers warm as you go.
