Description

This delightful Red Velvet Cake Roll is a perfect dessert for any occasion, filled with a creamy mixture and topped with fresh berries.

Ingredients

Scale
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring
  • 2 tablespoons vegetable oil
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate ganache (optional)
  • Fresh raspberries and blueberries for garnish
  • Crushed nuts for topping

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. Mix Dry Ingredients: In a bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. Beat Eggs and Sugar: In a large bowl, beat the eggs and granulated sugar with an electric mixer until thick and pale. Add vanilla extract, red food coloring, and vegetable oil. Mix until combined.
  4. Combine Mixtures: Gradually fold in the dry ingredients into the wet mixture until just combined.
  5. Bake: Pour the batter into the prepared pan, spreading evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  6. Cool and Roll: Remove from the oven, and immediately roll the cake with parchment paper from the short end. Let cool completely.
  7. Prepare Filling: In a separate bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract. Whip heavy cream in a different bowl until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
  8. Assemble Roll: Carefully unroll the cooled cake, spread the filling evenly over the surface, and reroll the cake without the parchment paper.
  9. Decorate: If desired, drizzle chocolate ganache over the top and sprinkle with crushed nuts. Garnish with fresh raspberries and blueberries.

Notes

  • Make sure to roll the cake while it’s still warm to prevent cracking.
  • Allow the cream cheese to reach room temperature for easier mixing.
  • Refrigerate for at least 1 hour before serving to let the flavors meld.
  • For a more vibrant color, adjust the amount of red food coloring to your preference.
