Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- Mix Dry Ingredients: In a bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
- Beat Eggs and Sugar: In a large bowl, beat the eggs and granulated sugar with an electric mixer until thick and pale. Add vanilla extract, red food coloring, and vegetable oil. Mix until combined.
- Combine Mixtures: Gradually fold in the dry ingredients into the wet mixture until just combined.
- Bake: Pour the batter into the prepared pan, spreading evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
- Cool and Roll: Remove from the oven, and immediately roll the cake with parchment paper from the short end. Let cool completely.
- Prepare Filling: In a separate bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract. Whip heavy cream in a different bowl until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
- Assemble Roll: Carefully unroll the cooled cake, spread the filling evenly over the surface, and reroll the cake without the parchment paper.
- Decorate: If desired, drizzle chocolate ganache over the top and sprinkle with crushed nuts. Garnish with fresh raspberries and blueberries.
