- 2 lbs Yukon Gold potatoes
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup vegetable broth or water
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
- Cut the potatoes into thick wedges, about 6–8 per potato.
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and broth.
- Toss the potatoes in the marinade until fully coated.
- Arrange potatoes in a single layer on the baking dish, cut side down.
- Roast for 40 minutes, then baste with pan juices and flip each wedge.
- Increase oven temperature to 425°F (220°C) and roast for another 15–20 minutes until crispy.
- Sprinkle with sea salt and serve hot with lemon wedges.
Notes
- For extra flavor, add freshly chopped herbs like parsley or thyme before serving.
- Make sure to cut potatoes evenly for consistent roasting.
