Description

Delicious roasted Yukon Gold potatoes infused with lemon, garlic, and herbs.


Ingredients

  • 2 lbs Yukon Gold potatoes
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup vegetable broth or water

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.
  2. Cut the potatoes into thick wedges, about 6–8 per potato.
  3. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and broth.
  4. Toss the potatoes in the marinade until fully coated.
  5. Arrange potatoes in a single layer on the baking dish, cut side down.
  6. Roast for 40 minutes, then baste with pan juices and flip each wedge.
  7. Increase oven temperature to 425°F (220°C) and roast for another 15–20 minutes until crispy.
  8. Sprinkle with sea salt and serve hot with lemon wedges.
