Description
Delicious and creamy strawberry fat bombs, perfect as a healthy snack or dessert option.
Ingredients
Scale
- 8 oz cream cheese, softened
- 4 tablespoons butter, softened
- 1/2 cup strawberries, finely chopped
- 2–3 tablespoons powdered monk fruit or erythritol sweetener (to taste)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prep the ingredients: Let the cream cheese and butter sit at room temperature for about 30 minutes to soften. This makes blending easier and ensures a smooth texture.
- Mix the base: In a large mixing bowl, combine the cream cheese and butter. Use a hand mixer or stand mixer to beat until the mixture is creamy and smooth with no lumps.
- Add flavor and sweetness: Add the powdered sweetener, vanilla extract, and a pinch of salt. Beat again until fully incorporated. Taste and adjust sweetness if needed.
- Fold in strawberries: Gently fold in the finely chopped strawberries using a spatula. Be careful not to overmix—the strawberries should remain slightly chunky for a juicy bite.
- Chill the mixture: Place the bowl in the refrigerator for about 30 minutes. This will firm up the mixture, making it easier to shape into fat bombs.
- Shape into fat bombs: Once chilled, use a small cookie scoop or tablespoon to form small balls. Arrange them on a parchment-lined baking sheet or plate.
- Freeze or refrigerate: Place the fat bombs in the freezer for 10–15 minutes to firm up even more, or store them directly in the fridge for a softer texture.

- This recipe is a great low-carb snack option.
