A delicious and moist lemon and strawberry cake perfect for any occasion.

- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs at room temperature
- 1 cup whole milk at room temperature
- Zest of 2 lemons for flavor
- ¼ cup fresh lemon juice
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 1 cup fresh strawberries, pureed
- 2 teaspoons vanilla extract
- A splash of milk if needed for consistency
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add in the softened butter and mix until the mixture looks sandy.
- Next, add the eggs, milk, lemon zest, and lemon juice. Mix until smooth.
- Evenly distribute the cake batter into the prepared pans.
- Bake for 25–30 minutes or until a toothpick comes out clean.
- Allow the cakes to cool in their pans for 10 minutes before transferring to a wire rack to cool completely.
- In a medium bowl, beat the softened butter for the frosting until creamy.
- Gradually add the powdered sugar and strawberry puree, mixing until combined and fluffy.
- Adjust consistency with a splash of milk if necessary.
- Once the cakes are completely cooled, place one layer on a serving plate.
- Spread a generous layer of strawberry frosting, top with another cake layer, and repeat.
- Frost the top and sides of the cake.
- Finish by garnishing with fresh strawberries on top for a gorgeous presentation.
Notes
- This cake is best served fresh but can be stored in the refrigerator for a few days.
- For added flavor, you can use lemon extract in the batter.
