Ingredients

  • 1 cup unsalted butter, softened
  • 4 large eggs at room temperature
  • 1 cup whole milk at room temperature
  • Zest of 2 lemons for flavor
  • ¼ cup fresh lemon juice
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1 cup fresh strawberries, pureed
  • 2 teaspoons vanilla extract
  • A splash of milk if needed for consistency

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add in the softened butter and mix until the mixture looks sandy.
  4. Next, add the eggs, milk, lemon zest, and lemon juice. Mix until smooth.
  5. Evenly distribute the cake batter into the prepared pans.
  6. Bake for 25–30 minutes or until a toothpick comes out clean.
  7. Allow the cakes to cool in their pans for 10 minutes before transferring to a wire rack to cool completely.
  8. In a medium bowl, beat the softened butter for the frosting until creamy.
  9. Gradually add the powdered sugar and strawberry puree, mixing until combined and fluffy.
  10. Adjust consistency with a splash of milk if necessary.
  11. Once the cakes are completely cooled, place one layer on a serving plate.
  12. Spread a generous layer of strawberry frosting, top with another cake layer, and repeat.
  13. Frost the top and sides of the cake.
  14. Finish by garnishing with fresh strawberries on top for a gorgeous presentation.
