Description
This Asparagus Gruyere Tart is a delightful dish featuring flaky puff pastry topped with fresh asparagus and creamy gruyere cheese.

- 1 sheet Puff Pastry (Store-bought for convenience.)
- 1 large Egg (For brushing on crust.)
- 1 tablespoon Fresh Thyme (Dried thyme can be used; halve the amount.)
- 1 cup Gruyere Cheese (Grated, can substitute with Swiss or fontina.)
- 1 bunch Asparagus (Trim tough ends before using.)
- 2 tablespoons Olive Oil (Can also use melted butter.)
- to taste Salt
- to taste Pepper
Instructions
- Roll out the puff pastry on a lightly floured surface until it measures approximately 11 x 9 inches. Trim to a rectangle of 11 x 7 inches.
- Brush the edges of the rectangular pastry with beaten egg. Attach pastry strips vertically along the edges.
- Prick the center lightly with a fork to prevent it from puffing during baking.
- Sprinkle fresh thyme leaves evenly over the base of the tart crust. Add grated gruyere cheese.
- Cut asparagus to fit and arrange on top of cheese. Drizzle with olive oil and season with salt and pepper.
- Preheat oven to 400°F (200°C). Brush edges with remaining beaten egg and bake for 20-25 minutes.

- This tart can be served warm or at room temperature.
