Description

Delicious crepes filled with a creamy blueberry filling that are perfect for breakfast or dessert!


Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 cup fresh blueberries
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • Fresh mint leaves (for garnish)
  • Additional blueberries (for garnish)

Instructions

  1. Prepare the Crepe Batter:
    In a large mixing bowl, whisk together flour and eggs. Gradually add milk and water, stirring to combine. Add salt and melted butter, and beat until smooth. Let the batter rest for at least 30 minutes at room temperature.
  2. Cook the Crepes:
    Heat a lightly oiled frying pan over medium-high heat. Pour about 1/4 cup of batter onto the pan for each crepe. Tilt the pan in a circular motion so that the batter coats the surface evenly. Cook the crepe for about 1-2 minutes or until the bottom is light brown. Loosen the crepe with a spatula, flip and cook the other side.
  3. Prepare the Blueberry Cream Cheese Filling:
    In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the blueberries.
  4. Assemble the Crepes:
    Place the crepe on a plate and spread a generous amount of the blueberry cream cheese filling down the center of each crepe. Roll up the crepe and place it seam side down.
  5. Serve:
    Dust with powdered sugar and garnish with fresh mint leaves and additional blueberries.

Notes

  • Allowing the crepe batter to rest helps the flour fully absorb the liquid and results in a better texture.
  • Use a non-stick pan to make flipping the crepes easier.
  • If the batter is too thick, add a little more milk to thin it out.
  • In the filling, you can substitute blueberries with raspberries or strawberries for a different flavor.
