- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 1 1/2 cups blueberry pie filling
- Fresh blueberries and mint leaves for garnish
Instructions
- Prepare the Crust: Preheat your oven to 325°F (163°C). In a bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.
- Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add vanilla extract and flour, mixing well. Add eggs one at a time, beating after each addition until just combined. Pour the filling into the prepared crust.
- Bake the Cheesecake: Bake for 45-50 minutes, or until the center is set but still slightly wobbly. Remove from oven and allow to cool to room temperature.
- Add the Topping: Once cooled, spread the sour cream evenly over the top of the cheesecake. Spoon blueberry pie filling over the sour cream layer, spreading it gently.
- Chill: Refrigerate the cheesecake for at least 4 hours, or overnight, to set completely.
- Garnish: Before serving, decorate with fresh blueberries and mint leaves.
