Description

A delicious creamy pasta dish featuring burrata cheese and fresh spinach.

Ingredients

Scale
  • 12 ounces tortiglioni pasta
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 8 ounces burrata cheese, torn into pieces
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Cook the tortiglioni in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for 30 seconds until fragrant.
  3. Add cherry tomatoes and cook until softened (about 2-3 minutes).
  4. Stir in spinach, salt, and pepper; cook until wilted (about 1-2 minutes).
  5. Pour in heavy cream and simmer for a few minutes until slightly thickened.
  6. Combine cooked tortiglioni with the sauce, then gently fold in burrata and Parmesan until melted.
  7. Garnish with fresh basil and serve immediately.

Notes

  • For a spicier kick, add red pepper flakes when sautéing the garlic.
  • Feel free to substitute the tortiglioni with another pasta shape of your choice.
