- 12 ounces tortiglioni pasta
- 1 tablespoon olive oil
- 2 teaspoons minced garlic
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 cup heavy cream
- 8 ounces burrata cheese, torn into pieces
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
Instructions
- Cook the tortiglioni in a large pot of salted boiling water until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic for 30 seconds until fragrant.
- Add cherry tomatoes and cook until softened (about 2-3 minutes).
- Stir in spinach, salt, and pepper; cook until wilted (about 1-2 minutes).
- Pour in heavy cream and simmer for a few minutes until slightly thickened.
- Combine cooked tortiglioni with the sauce, then gently fold in burrata and Parmesan until melted.
- Garnish with fresh basil and serve immediately.
Notes
- For a spicier kick, add red pepper flakes when sautéing the garlic.
- Feel free to substitute the tortiglioni with another pasta shape of your choice.
