Cheesy Mashed Potato Bake

Description

A delicious and creamy cheesy mashed potato bake with sautéed onions and paprika.


Ingredients

Scale
  • 2 lbs russet potatoes, peeled and chopped
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream (or milk)
  • 1 medium onion, finely chopped
  • 1 cup sharp cheddar cheese, shredded
  • 2 tsp paprika (smoked if preferred)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Boil the chopped potatoes in salted water until fork-tender (about 15-20 minutes). Drain and return to the pot.
  3. Mash the potatoes with butter, heavy cream, salt, pepper, and paprika until smooth.
  4. Sauté onions in a skillet over medium heat until soft, about 5 minutes.
  5. Layer half of the mashed potatoes in the baking dish, top with sautéed onions and half the cheese. Add remaining mashed potatoes and sprinkle with remaining cheese.
  6. Bake for 25-30 minutes until bubbly and golden.
