- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lime
- 1 tablespoon lime juice
- 1 cup powdered sugar
- 2 tablespoons unsalted butter, softened
- 2–3 tablespoons lime juice
- Green food coloring (optional)
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- Mix Dry Ingredients: In a bowl, combine flour, baking powder, and salt. Set aside.
- Prepare Wet Mixture: In a separate bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lime zest, and lime juice.
- Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Bake: Pour the batter into the prepared baking pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
- Prepare Frosting: In a bowl, beat the powdered sugar and butter until smooth. Gradually add lime juice until the frosting reaches desired consistency. Add a few drops of green food coloring, if using, and mix until evenly colored.
- Assemble: Spread the lime frosting evenly over the cooled cake. Cut into bars.
Notes
- For extra lime flavor, add more zest to the frosting.
- Ensure the cake is completely cooled before frosting to prevent melting.
- Store in an airtight container at room temperature for up to three days.
