Description

Ingredients

  • 1 cup pistachio kernels, finely ground
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup yogurt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup sugar (for syrup)
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon rose water (optional)

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Prepare Cake Batter: In a bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the yogurt and vanilla extract until well combined. In another bowl, mix the flour, ground pistachios, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with the flour mixture.
  3. Bake the Cake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack.
  4. Prepare Syrup: In a saucepan, combine sugar, water, and lemon juice. Bring to a boil and let it simmer for about 10 minutes or until slightly thickened. Stir in rose water if using, and remove from heat.
  5. Soak the Cake: While the cake is still warm, poke holes in it using a skewer. Slowly drizzle the warm syrup over the top, allowing it to soak in.
