Description

  • 1 cup fresh raspberries
  • Extra raspberries for decoration

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. Prepare Meringue: In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add the sugar, one tablespoon at a time, beating well after each addition until the meringue is thick and glossy. Gently fold in the vinegar and cornstarch until just combined.
  3. Bake Meringue: Spread the meringue evenly onto the prepared baking sheet. Bake for 20-25 minutes, or until the meringue is crisp and lightly golden. Allow to cool completely on a wire rack.
  4. Prepare Filling: In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  5. Assemble Roulade: Gently peel the meringue from the parchment paper. Spread the whipped cream mixture over the meringue, leaving a small border around the edges. Place the raspberries evenly over the cream.
  6. Roll the Roulade: Starting from one short end, carefully roll up the meringue into a log shape using the parchment paper to help guide you. Transfer to a serving platter seam side down.
  7. Decorate: Top with extra whipped cream and fresh raspberries for decoration.
