Ingredients
Scale
- 3 large eggs
- 1 cup granulated sugar
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup buttermilk
- 1 tablespoon red food coloring
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Red icing hearts or sprinkles
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper.
- Make the Cake Batter: In a large bowl, beat the eggs until thick and pale. Gradually add granulated sugar, beating until well combined. Stir in vegetable oil and vanilla extract. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually add dry ingredients to the egg mixture, alternating with buttermilk. Mix until smooth. Add red food coloring, mixing until evenly combined.
- Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes, or until the cake springs back when lightly touched. Immediately loosen edges and turn the cake onto a clean kitchen towel dusted with powdered sugar. Gently peel off parchment paper and roll the cake with the towel, starting from the narrow end. Cool completely on a wire rack.
- Prepare the Filling: Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Roll and Fill the Cake: Unroll the cooled cake and spread the filling evenly over it. Roll the cake back up without the towel.
- Make the Frosting: Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar, then vanilla extract, and beat until smooth.
- Frost the Cake: Spread cream cheese frosting over the entire cake roll. Decorate with red icing hearts or sprinkles.
Notes
- Rolling the Cake: Make sure to roll the cake while it’s still warm to prevent cracking.
- Filling Tips: Chill the bowl and beaters before whipping the cream for faster results.
